Ingredients
  

For the Beef & Potatoes:

  • 1.5 lbs beef chuck roast cut into 1-inch pieces
  • 1 lb baby potatoes halved
  • 1 tbsp olive oil
  • ¼ cup beef broth

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter melted
  • 4 garlic cloves minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • Salt and pepper to taste

For Garnish:

  • 2 tbsp fresh parsley chopped

Instructions
 

Prep Ingredients (5 mins):

  • Cut beef into uniform 1-inch cubes.
  • Halve baby potatoes (quarter if large).
  • Mince garlic and chop parsley.

Sear Beef (Optional, 5 mins):

  • Heat olive oil in a skillet over medium-high.
  • Sear beef in batches until browned (2–3 mins per side). Transfer to slow cooker.

Make Garlic Butter Sauce (2 mins):

  • Whisk melted butter, garlic, thyme, rosemary, paprika, onion powder, salt, and pepper.

Layer in Slow Cooker (3 mins):

  • Place potatoes at the bottom. Drizzle with half the sauce.
  • Add seared beef on top. Pour remaining sauce and beef broth over everything.

Cook (6–8 hours):

  • Cover and cook on LOW for 6–8 hours (or HIGH for 3–4 hours) until beef is fork-tender.

Serve:

  • Gently stir to coat in sauce. Garnish with parsley. Rest 5 minutes before serving.

Notes

  • Storage: Refrigerate leftovers for up to 3 days or freeze for 2 months.
  • Substitutions: Use sweet potatoes or add carrots for variation.
  • Thicker Sauce: Mix 1 tbsp cornstarch + 1 tbsp water, stir into liquid, and simmer.
