Ingredients
  

Dry Ingredients:

  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Wet Ingredients:

  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1/2 cup (120ml) unsweetened applesauce
  • 1/3 cup (80ml) vegetable oil or melted butter
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) milk

Optional Add-Ins:

  • 1/2 cup (50g) chopped walnuts or pecans
  • 1/2 cup (75g) raisins or chocolate chips
  • 2 tbsp granulated sugar + 1/2 tsp cinnamon Topping

Instructions
 

Prep & Preheat:

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease lightly.

Mix Dry Ingredients:

  • In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

Combine Wet Ingredients:

  • In another bowl, whisk sugars, applesauce, oil, eggs, vanilla, and milk until smooth.

Make Batter:

  • Pour wet ingredients into dry ingredients. Gently fold until just combined (do not overmix).
  • Fold in optional add-ins (nuts, raisins, or chocolate chips).

Fill & Top:

  • Divide batter evenly among muffin cups (3/4 full).
  • Sprinkle with cinnamon-sugar topping if desired.

Bake:

  • Bake 18–20 minutes until a toothpick comes out clean.
  • Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • Storage: Keep in an airtight container for 3 days or freeze for 3 months.
  • Substitutions: Use whole wheat flour for half the AP flour, or almond milk for dairy-free.
  • Pro Tip: For taller muffins, let batter rest 10 minutes before baking.
